Expect banh mi with pate and pickled vegetables, a bowl of pho simmered overnight, fresh spring rolls wrapped at the table, and grilled skewers cooked over charcoal on the pavement. If you ride by motorbike, your guide will handle the traffic so you can concentrate on eating.
